Southern chicken flavour coating (15g/½oz)

Get cooking implements ready:

One oven baking tray; One large saucepan (for boiling potatoes); One medium-large saucepan (for broccoli); One steamer basket to fit medium-large saucepan; One large non-stick saucepan; One stirring spoon; One spatula; Two large bowls – one for flour; one for set-aside chicken; One cup for egg; One small bowl for dipping sauce; Colander to drain broccoli

Wash, scrub and cut 900g (2lb) potatoes into pieces (c.1" cubes)

Put on 3½ pints (1¾l) fresh water to boil in a large saucepan for potatoes

Grease an oven baking tray with a little oil

Wash eight chicken thighs; shake to leave damp but not wet; and set aside into a bowl

Mix 115g (4oz) of natural (or golden) breadcrumbs with 15g (½oz) of southern-flavour coating in a second bowl

Turn oven on 200oC/400oF/Gas Mark 6

Break the egg into a cup, mix up with a fork, pour over chicken and mix well

Take chicken thighs one-at-a-time, coat in the breadcrumb mixture, and place onto the greased baking tray once completed

Put potatoes in to large saucepan to boil

Put baking tray of chicken into oven to cook

Cut up the onion and set aside

Make a dipping sauce for the chicken; Into a bowl mix 75g (2½oz) of tomato puree; 1 tablespoon of sun-dried tomato paste; ½ teaspoon of soy sauce; 1 tablespoon of orange juice; 1 tablespoon of honey; a grind or two of black pepper

Wash c.450g (1lb) broccoli and cut into sections

Heat 1½ tablespoons (23ml) of vegetable oil in non-stick pan

Drain potatoes and cut them into c.1cm cubes

Put onion into non-stick pan to fry over a medium-low heat

Put steamer basket into saucepan and pour in water so it is just under base of basket; Put on to boil

Add potatoes to fry with onion in non-stick pan, turning heat up to medium and stirring regularly

Put broccoli into steamer basket to cook (place lid over saucepan if you have one)

Get chicken from oven and serve with broccoli and potato/onion mix

 

 

F. Post-Serving Notes

 

The Meal

It's not really from Montana, and the chicken is baked not fried.  So sue me.

 

Variations

·      You can put the breadcrumb mixture into a sealable plastic bag rather than a bowl, and pop one thigh in at a time to coat.

·      Use chicken breasts cut in half or (for larger ones) thirds instead of thighs
