Large saucepan for pasta; Medium-large saucepan for cauliflower; Medium non-stick saucepan or deep frying pan for sauce; Medium-large casserole dish that will fit under grill; Cooking spoon; Colander to drain veg and pasta; Jug for milk; Scissors to cut bacon; Cheese grater

Measure out 500ml (18 fl.oz) of milk

Measure out 45g (1½oz) of flour and 150g (5oz) of cheese

Break cauliflower head into florets (c.2cm cubes) and wash

Put 2 pints (1l) fresh water on to boil in medium saucepan

Heat 1 tablespoon of oil in non-stick saucepan

Start frying onion in non-stick pan

Cut five bacon rashers into bite-sized pieces into non-stick pan to fry

Turn heat off under non-stick pan and stir flour into onion and bacon

Turn heat under non-stick pan back on to medium; Stirring as you go, add the milk a small portion at a time (initially c.50ml, then more as the sauce is formed)

Put cauliflower florets into boiling water in medium saucepan

The milk sauce should be simmering by now so turn the heat down and keep it simmering for five minutes; Keep stirring

Stir pasta once to prevent sticking

Add ½ teaspoon of mustard, ⅔ of the grated cheese (100g/ 3½oz) and a grind of black pepper to the milk sauce and stir until well mixed

Turn the grill on to medium

Drain the cauliflower in a colander and place into a casserole dish

Pour the sauce over the cauliflower and sprinkle the remaining grated cheese on top
